Barbecue is a state of mind. Anyone can do it, If you live in an apartment, it will be more difficult, but definitely doable. If you do not have a smoker, it will be more difficult, but still doable. Do not get discouraged.
First, it does not matter if you want to use Baby Back Ribs or Spare Ribs. This method will work for both.
Go to your Grocery Store or Butcher Shop and 1 or more racks of ribs. Ask the the Butcher to remove the membrane. Not necessary, but helpful.
Second, let the ribs rest on the counter for 20 minutes. While waiting, set oven to 250° Dry Rub, very simple recipe:
* 1/2 cup freshly ground black pepper/
* 1/2 cup ground cayenne pepper/
* 1 cup dark brown sugar/
3 tablespoons salt
Place ribs on a foil covered cookie sheet. Massage the dry rub in on both sides of the ribs. Only use 2 racks per cookie sheet.
Now, place a cookie sheet with 2 Racks of Ribs on it into the oven. After four hours, remove the cookie sheet from the oven. Cover the ribs with foil. That will allow them to steam and further tenderize
Please use your favorite store sauce. Slather the sauce all over the racks. Place them back in the oven for 15 minutes. Add more along the way.
After 15 minutes, you are ready to EAT Tender, lip smacking ribs. Well, that’s it for now. Professional Quality Ribs. If you are desperate for the smoke flavor, place a few drops of Liquid Smoke (available in grocery stores) on your ribs and rub them in before rubbing it in your dry rub. That will get your ribs a bit closer. going to run vacuum
